Having spent time around rescued chickens, I view National Chicken Month, September, as a time to celebrate these sweet, inquisitive birds. I only wish everyone would learn to appreciate chickens for their personalities — not for the taste of their flesh.
Chickens are more like us than many people realize. They form strong family ties and mourn when they lose a loved one. When they're not on factory farms, hens will lovingly tend to their eggs and "talk" to their unborn chicks, who chirp back. Chickens communicate constantly; they have at least 24 distinct cries to convey information and warn one another of predators. These smart birds can anticipate the future and demonstrate self-control — I can't say that for everyone!
